GUARANTEED SEGOVIAN SUCKLING PIG – PROCOSE:

This seal provides a guarantee that the suckling pig has been raised solely in the province of Segovia, has passed strict quality controls, and the chef has followed certain procedures. Those with the guarantee will have a ticket around their right hind leg and a number to identify their origin and preparation, a stamp branded by fire identifying the restaurant as operating within the guarantee system.

SEGOLECHAL:

Suckling lamb is one of the bastions of Segovian cuisine. Suckling lamb from Segovia must fulfil certain requirements to guarantee its quality and thus bears the "Marca de Calidad Segolechal" quality seal.

CANTIMPALOS CHORIZO:

It is traditional in the village which bears its name and throughout the south of the province in general. The designation originated from the desire to conserve the quality of this product and its traditional name; to foster traditional habits of consumption; to promote its nationally and internationally and protect the interests of producers.
